How About Breakfast With Thanksgiving Leftovers?

 Chances are you have at least a few left over potatoes you didn't use from all of your hard work on Thanksgiving. I would hope you are going to dive into plenty of leftovers Friday and through the weekend but first let's make something for breakfast!

I absolutely love breakfast bowls. There really aren't any rules and you can get really creative. It's a great way to use things up if you want also. They are like an all in one breakfast and as you will see the more you read through this blog, hopefully, you will find my dishes tend to go in bowls. 

Back to the breakfast bowl though. While I said you can be creative, let's put in a few rules, no let's say guidelines in place first. 

Let's talk potatoes first. I think that potatoes are a great base for the bowl. They are hearty, you probably have a few laying around, and they are a blank canvas. It can essentially be any type of potato that you want. Additionally you can use the potato how you want. You can cube the potato up for home fries, or shred them to make your base more of a hashbrown. I prefer making them into home fries because you can add more flavor. Dice them small, you can just cook them in the pan that way! Having said that I always dice up the potatoes with some peppers and onions. This is just my go to. As far as the seasoning goes, that's completely up to you. However my go to seasoning blend for breakfast potatoes is:

  • Salt & Pepper
  • Garlic Powder
  • Onion Powder
  • Smoked Paprika
There is one other thing I tried and I absolutely loved it! I had some left over white rice so I made that the base of my breakfast bowl and turned it into a fried rice breakfast bowl. Not conventional, but man was it amazing!


Onto The Meats!


Breakfast bowls are kind of supposed to be an all in one breakfast. What meat though? Well what do you have on hand. If your family does a ham as well as a turkey on Thanksgiving. Dice some left over ham up, brown it off and throw it on top of the potatoes. That's bonus points, two things from the previous day being used!
However there is nothing wrong with browning some sausage or crisping up some bacon to throw on top as well. If you really feel that you need to slop up the previous days adventures, then make a sausage gravy. Those are the bowls I personally like best. 

Quick Gravy Tips


The simpler the gravy, the better it is. For sausage gravy just brown your sausage and add equal parts butter and flour to the pan. Make your roux this way. Once everything is incorporated add milk till you cover everything, preferably whole milk. Add a generous amount of black pepper and stir, check, stir, check until its thickened to the consistency you want. 

Then There Was the Egg


Do your egg however you want. I've done scrambled, over easy, poached, soft boiled, you name it. I honestly think it depends on your dish. One thing to always remember is that if you have a runny yolk, you get to have natures best sauce! Having said that there is an argument to be had for cheesy scrambled eggs!


Quick Note on Cheese


You have to have cheese. This is a non negotiable. If it's a dish that could have cheese, let there be cheese! If I'm not doing a cheesy scramble I always add these cheese last minute to my potatoes, just enough to melt. 

The Condiments!


This can take your flavors all over the map. Just consider what you have in the bowl already and go with what you like. As I said before my favorite breakfast bowls consist of sausage gravy but when I'm not going that direction, I usually use a spicy siracha or a chili garlic paste to bring everything together.
Don't forget some fresh pops of flavor with some diced green onions, crushed red pepper, or some fresh chives! 

Plenty of possibilities with breakfast bowls. Again they are a great way to break up the left overs and use them for breakfast. There are a lot of obvious things to do with lunch and dinner but let's use some of that stuff up for breakfast through the weekend!
